No, Hunters can't use maces in WoW Forever, one-handed or two-handed. They can use bows, crossbows, guns, thrown weapons, daggers, fist weapons, axes, swords, polearms and staves. This comes from a trainer list compiled during the beta, because Blizzard hasn't published a weapon table for Forever. We label it Beta data until we've checked live trainers.

Your ranged weapon matters most
Most of your damage comes from your bow, gun or crossbow. A melee weapon is for when something gets past your pet, because Hunters have a dead zone where they can't shoot. A two-handed weapon with good stats can still be worth it, since some Hunter abilities use it.
Train it first
Weapon skills come from weapon masters in the capital cities. If you can't equip something on the list, train the skill first.
Our Hunter guide has stats and talents, the leveling plan has the route, and Hunter professions covers Skinning and Leatherworking.
