Can hunters use maces in WoW Forever: no. Can paladins use axes: yes, one-handed and two-handed. Can shaman dual wield: not as far as anyone has shown. Can shamans tank: as a temporary tank in small groups, according to Blizzard.

How sure we are

Blizzard hasn't published a weapon table for Forever. The list below comes from Warcraft Tavern's trainer guide, read on 2 November, so we label it Beta data. We'll check it against live trainers.

What each class can train

Class Weapons
Druid Daggers, fist weapons, one-handed maces, two-handed maces, polearms, staves
Hunter Bows, crossbows, guns, thrown, daggers, fist weapons, one- and two-handed axes, one- and two-handed swords, polearms, staves
Mage Daggers, one-handed swords, staves, wands
Paladin One- and two-handed axes, maces and swords, polearms
Priest Daggers, one-handed maces, staves, wands
Rogue Bows, crossbows, guns, thrown, daggers, fist weapons, one-handed axes, maces and swords
Shaman Daggers, fist weapons, one- and two-handed axes and maces, staves
Warlock Daggers, one-handed swords, staves, wands
Warrior Everything above except wands

Can hunters use maces?

No, on the Beta data above. Hunters get axes and swords, but no maces of either size.

Can paladins use axes?

Yes, on the Beta data above. Both one-handed and two-handed axes, alongside maces, swords and polearms.

Can shaman dual wield?

Unverified, and probably not. Blizzard's Shaman post makes two-handed axes and maces a baseline ability for the class and doesn't mention dual wield anywhere. Players on Blizzard's forums say the same and have asked for it to be added, but nobody we found links a Blizzard statement ruling it out. If you plan to play Enhancement, plan on a two-hander.

Can shamans tank?

Yes, in a limited way. Confirmed. Blizzard says Enhancement keeps its ability to "serve as a temporary tank in small group gameplay", through Rockbiter Weapon and two talents, Spirit Weapons and Improved Stormstrike. That's off-tanking in dungeons, not a raid main tank role, and Blizzard doesn't promise more. See the Shaman class page.

Can warriors tank?

Yes. Confirmed. Protection Warrior is a full tanking spec, and several old tanking talents such as Improved Taunt are now baseline (Blizzard's Warrior post). The other tanking classes are compared in our tier lists.

What else changed

Racial weapon skill bonuses are gone or reworked, and weapon skill on items is much smaller than in Classic (panel recap). Rogues can equip one-handed axes now, and weapon specialization talents have merged into single talents for Warriors and Rogues. Each class's changes are on its class page.
